AHP, DVM (UPM), PhD (Queensland) Nutrient Metabolisms in Livestock Animals LO: At the end of this lecture, students should be able to i. explain protein and amino acid metabolism in the body ii. explain glycolysis and gluconeogenesis •[Main Topic] The major difference between ruminants and non-ruminants is microbial fermentation/digestion of food in the reticulo-rumen, where food remains longer in the gastrointestinal tract. •[Protein Digestion & Metabolism] Microorganisms in the rumen produce proteolytic activity responsible for releasing amino acids (AA) from dietary protein, which may be further deaminated. In ruminants, ingested protein follows these pathways: 1. As food passes through the rumen, much of the protein is degraded into peptides by proteases. These peptides are then broken down into free amino acids and later into NH4, fatty acids, and CO2. 2. Degradation products like NH4 are used by microbes for protein synthesis and microbial cell components. 3.
